Position and years of experience: I’m the chef. I’ve worked here since it opened three months ago, and I’ve worked at a number of local restaurants.
Favorite food: I love Italian. I grew up in an Italian family.
Favorite dish to prepare: I like to make ravioli. We make the pasta dough for it from scratch.
Where do you like to eat when not at Ciao’s? I enjoy Chef’s Kitchen in Beaverdale.
Any tips for Cityview readers? I’d say to try and keep it simple. A few ingredients make for a great dish.
What do you recommend at Ciao’s? The ravioli or the herb-roasted organic chicken is great.
Why do patrons choose to eat at Ciao’s? We are not Graze. Ciao’s moved in here five days after Graze closed, and I think some people get us mixed up. We’re trying to do it right, and 99 percent of the stuff we do here is from scratch.
Do you create your own dishes? Yes, I create the dishes. I will probably change the menu seasonally. Right now, we are doing lighter dishes since it’s summer. We try to get most of our ingredients from natural, organic products, and we like to use Clevery Farms.
