Position: I am the Executive Chef and I have been cooking for about 17 years, now.
Where do you eat when you are not at Ciao? I try to eat at home, but when I do get out I will visit Mojo’s every now and then. Django and Centro are really good, too.
What is your favorite food here? The scallops are phenomenal. They are u/10 (Biggest Available), dry-packed scallops; very sweet. We griddle them until they are nice and crispy on top and serve them over polenta.
What is your favorite food to make here? Any grilled meat. The grilled rib eye is made with certified prime-grade Black Angus and is fantastic. It is a melt-in-your-mouth piece of meat.
Why should people come to Ciao if they have never been here before? It is a very funky atmosphere with the purple walls, red booths and local artists’ work on the walls. The food is almost all Iowa raised. Were trying to keep everything within the state.
What is Ciao known for? We just opened so it is hard to say at this point, but hopefully we are going to be known for our artistic atmosphere as well as our food. Mainly everything made in-house from scratch with local ingredients.
