Position and years experience: Head sushi chef. Started in New York more than 10 years ago and have worked at Appare for three years.
How did you learn how to cook and prepare sushi? I worked for various restaurants in New York where I learned the best way to prepare the ingredients.
What would you recommend to Cityview readers to order? There are a lot of great choices on the menu, but I recommend the sushi and to try the Las Vegas roll, which is our signature roll.
What makes Appare different then other sushi restaurants? The main thing is our space that we have at the restaurant. We have the hibachi tables and the traditional Tatami rooms and party rooms. We also use the freshest ingredients, and aim for the highest quality of our products.
What is the biggest tip you can give Cityview readers on making sushi? Preparing the fish and the freshness of your ingredients is very important when making sushi. Know how to keep your ingredients fresh. Also, there are certain parts of the fish that work best for different dishes. Knowing which parts will best complement your dish comes with experience.
What are some of the seasonal dishes that you enjoy preparing? Toro, or fatty tuna. This is a real delicacy that melts in your mouth. Also Uni, or sea urchin and giant clams.
